#ANCA Trip Part 3

Wednesday was the first official day of the #ANCA Summit being held at the Great Smoky Mountains Institute at Tremont. We spent most of the morning driving around Cades Cove (hot spot for Bears). And man did the bears come out that day! We saw 7 of them! A Mom and her 3 Cubs, 2 more Cubs (Mom was already up the hill) and a Male just taking a stroll down the hillside. From what I was told we were very lucky to see that many in one day. Later in the week we took 3 more drives around Cades Cove and no more bears were spotted. It was a great week to spend out in the Mountains, The weather was perfect and we even had a few thunderstorms to enjoy! There were lots of Campfire and Singing, I learned the words to more songs than I even thought was possible.

#ANCA Trip Part 2

Well we made it!! We got to our Cabin in the Woods at about 6:30pm and after all that unpacking the Starry Night was calling our names. Here are some pictures from our adventure to get here! First we went to Schlotzsky’s (My Mothers FAVORITE place to eat in the world!) From there we saw a billboard for Fazoli’s and that is one of the BEST places to get bread sticks! Yes they are as good as Olive Garden! Then it was a few hours drive to find our Oasis in the mountains.

#ANCA Trip Part 1

Well this was the start of our 7 day trip to Townsend, TN. We are staying in a 5 bedroom cabin that is located in the Great Smoky Mountains. More on that tomorrow! Today was just the kick start to the trip with a stop at the Rock Springs Nature Center located in Decatur, IL. Great place to spend the day! They have a 2nd story bird viewing area so you are at the same eye level with the birds! Also there are 9 hiking trails that you can take a simple 15 to 20 minutes stroll or an hour long hike.Here is a link to the website

The most exciting thing for the day was the Sushi making lesson that I got from our family friend. I had never even attempted to make Sushi before so this was an experience for me! It was so much fun! Did you know why the rice tastes so darn good? They add sugar to it! Yes that’s right SUGAR! I got to do everything from helping make the rice to chopping all of the vegetables. That is the hard part getting everything lined up so all you have to do is spread the rice and fill the roll with anything! I got to create a few rolls and we also used some recipes that we already had. Well I have to say everything was amazing! When we were finally done we had made a total of 11 rolls. This is something that I will definitely be doing again at home. I tried to take as many pictures as possible of the whole process so you can get an idea of what it takes to make just one roll.
