Pathway to the Ocean - Smathers Beach - Key West

Smathers Beach is the largest beach on Key West it is approximately half a mile long and is located on the south side of the island. The most notable event to take place on this beach was on September 2, 2013, when long-distance swimmer Diana Nyad arrived on Smathers Beach after swimming 110 miles from Havana, Cuba. It was the first time a person had ever swam from Cuba to Florida without a shark cage.

Smathers is a beautiful beach but it’s not what most people are looking for when they are booking an island getaway. This beach was man made many years ago and is still maintained with sand from the Bahamas.

Crockpot Fajita’s – Recipe

Crockpot Fajitas

Yes I know what you are thinking … how on earth can you make fajita’s in the Crockpot.  Well I tried.  And not to toot my own horn……….B U T ……….I  succeeded!

  • 1lb of boneless skinless chicken breasts
  • 2-3 onions sliced
  • 2-3 red, yellow and green peppers
  • 1 package of fajita mix

And that’s all you need. Unless you want to go a step above and beyond and make homemade hard-shell tortillas. Just put about a half a cup of oil in a pan and heat until you see small bubbles on the side. Then using tongs place half the shell in until crispy and then repeat on the other side.

After watching a Snapchat from Ree Drummond, The Pioneer Woman,  I wanted to see if I could make a microwave cake too! I looked online and found a recipe that I thought I could manage. It can’t be too hard right? Well I’m happy that I used a bowl and not a coffee mug like it called for!

Directions
Whisk 1/4 cup flour, 5 tablespoons sugar, 2 tablespoons cocoa powder, 1 egg, 3 tablespoons milk, 3 tablespoons vegetable oil and a dash of vanilla extract and salt in a large mug until smooth. Microwave until puffed, about 2 minutes.
